If we have already connected, you will know I appreciate life’s finer things, like interesting wine paired with delicious food, and atmosphere. Add some touches of adventure and a luxurious hotel room and you’re describing my dream date or weekend.
With 2024 on its way, I have put together a list of my ideal destinations and outings in and around Sydney and Melbourne. I’ve shared my ideas for a weekend tryst, a day together or an evening experience.

Sydney Wish List
This sunny city is known for its yacht-studded harbour, incredible beaches, and the iconic Opera House..

For the evening
Bennelong Restaurant & The Langham Hotel
The Sydney Opera House is iconic but despite visiting the city many times, I confess I’m yet to make it to this landmark. I’d love to have my first experience there at Bennelong Restaurant, which adds the Best Regional Wine List for Australasia to its fine dining menu.
Being from Canada, you’ll understand it’s always a joy to see Sydney Harbour and I’m excited to share an evening by the harbour with you.
After dinner, we can head back to The Langham Hotel, which offers luxurious rooms and old-world charm from its tucked-away location near The Rocks.
For the day
Private Yacht Charter on Sydney Harbour
If we have more time, let's book a private charter on the waters of Sydney Harbour. If it’s a warm and sunny day, we can take a dip and relax on board with a spread of sumptuous seafood and some chilled Champagne.
Local providers offer full or half-day cruises, and there are so many gorgeous vessels to choose from.
For the weekend
Hunter Valley Escape
You know I like to spoil my senses and the Hunter Valley is a good place to do this. It is most famous for its Semillon, which is rare to find in Australia not blended with something else. I would love to visit this region and taste what it has to offer.
Let’s hire a luxury car to make our way up the freeway, spend the afternoon exploring and wine-tasting, then spend the night somewhere amazing. There is no shortage of five-star places to stay and we will be spoiled for choice when it comes to restaurants as well.
Melbourne Wish List
Discover the cosmopolitan charm of Melbourne, Australia's cultural capital. From modern architecture to parks and laneways, it's a must-visit destination. Immerse yourself in the thriving arts scene, dine at renowned restaurants and trendy cafes.

For the evening
Private Yarra Cruise
Let’s get away from the crowds with a private cruise on a warm summer evening. There will be no distractions as we relax and enjoy each other’s company.
Afterwards, we can head to The Ritz-Carlton and look down on the lights of the city from this stunning high-rise spot.
For the day
Hot Air Ballooning
My apartment overlooks the Melbourne skyline and when I’m up before the sun I often spot hot air balloons on the horizon. They look so beautiful, and I’d love to experience this… I think it would be worth the early wake up call.
Once we have taken things to new heights we can freshen up and head somewhere amazing for lunch; my favourite spots at the moment are Gimlet at Cavendish House (one of the world’s top 50 restaurants) and Kisumé Japanese Restaurant in the CBD.
For the weekend
Explore the Coonawarra Region
Victoria’s stunning coastline beckons…
I am a serious wine lover and have always wanted to explore the Coonawarra Region on the Limestone Coast because I am a huge fan of the blends this region produces.
We can travel by car or both fly into Mount Gambier and use it as a gateway to explore the area. Let’s find a secluded and cosy holiday cottage with an open fire and hide ourselves from the world once we have chosen a couple of bottles of cabernet to take home.
BIGGER ADVENTURES
While we are on the subject of dates for 2024, I have a few more ideas for my bucket list that include places I would love to explore as part of a Fly Me To You experience.
We could treat ourselves to an amazing adventure at one of the following destinations:
Hamilton Island
I’ve heard so much about Hamilton Island and The Whitsundays and I love the thought of a getaway to this part of the world. There are some adults-only accommodation options that are either steps from the beach or up on the hillside with gorgeous views.
Skiing in New Zealand
If you’re keen for a bit of adventure, the other destination on my wish list is Queenstown in New Zealand. I’ve heard so much about this part of the world and I’d love to experience it for myself.

An amazing date or weekend has a combination of beautiful surroundings, delicious food and wine, breathtaking experiences and entertaining company.
